Milk Thistle is commonly referred to as a weed, but it was grown centuries ago as a vegetable crop in Europe. Milk Thistle possesses both culinary and therapeutic properties and the entire plant (buds, blooms, roots, leaves and seeds) is edible. The purple bloom that is produces in the spring and summer is most commonly used in teas and tonics. The leaves can be used in salads or cooked as spinach and the young shoots/stalks can be cooked like and substituted for cabbage or kale. The flowers attract bees, butterflies and other pollinators.

PLANTING INSTRUCTIONS: Direct sow seed in well-drained soil in a sunny location after last frost is expected. Plant in groups of 3-4 seeds ½" deep and space 30-36" apart.
